Sunday soup…

This soup recipe is from and made it last weekend. I served it with a crusty baguette and it was delicious!

Creamy Parmesan Tomato and Spinach Tortellini Soup


1 1/2 tbs butterimage
1 onion, diced
2 cloves garlic, chopped
red pepper flakes to taste
1/4 cup flour
3 cups vegetable broth or chicken broth
1 (28 ounce) can diced tomatoes
8 ounces cheese tortellini
1/2 cup parmesan grated
10 ounces baby spinach
1/2 cup half and half
salt and pepper to taste
1 tbs dried basil and oregano

1/2 lb sweet italian sausage or chicken breast, optional.


Brown the sausage or chicken in a pan over medium heat until fully cooked, remove from the pan and set aside.  Melt the butter in the same pan over medium heat, add the onion and cook until tender, about 5-7 minutes.  Add the garlic and red pepper flakes, cook until fragrant, about a minute.  Add the flour and cook for another minute.  Add the broth, tomatoes, tortellini, sausage or chicken and bring to a boil.  Reduce the heat and simmer until the tortellini is tender, about 5 minutes.  Add the Parmesan, spinach, cream, and dried spices.  Season with salt and pepper to taste.

Serves 4.
