Cooking with Ellie Grace…an easy kid friendly recipe!

I had the pleasure of Ellie Grace’s company yesterday afternoon and she has been after me for about a week saying, “I want to make a pie with you Monkey”.  Her voice is so cute and with the sweet expression on her face that I could not help but run right out and grab some apples, butter and flour and whip up that pie!

Instead of a whole pie I thought it would be easy and cute to make little apple cinnamon rolls and because time was not on our side yesterday. Here is the easy recipe I put together…basically on the fly:

Ingredients:

1 tube of crescent roll dough

For the Apples:

5 Apples, peeled and chopped.  Monkey did this ahead of time.

1/4 c. granulated sugar

1/8 c. light brown sugar

3 tbsp. cinnamon

1 tsp. pure vanilla extract

For the crumb topping:

3 tbsp. cold butter

1/8 c. flour

3/4 c. rolled oats

1/4 c. brown sugar

1 tsp. vanilla

2 tbsp. cinnamon

For the glaze:

4 tbsp. powdered sugar

1 tbsp. light cream or half & half

Directions:

On the stovetop melt the butter and add the apples, both sugars, cinnamon, and vanilla and cook until the apples are tender.


We took a break at this point and ran out for some chess, a latte, and a smoothie leaving the apples in the warm Dutch oven for about 40 minutes.

Okay, back to the recipe:

Directions, cont.

Make the crumb topping by combining all of the ingredients together and mixing them up with our hands, basically, “squishing it really good”, as Ellie Grace would say.

Once the crumb topping is done its time for assembly!

Grease or spray your muffin tin.

Take the crescent roll dough and spread it out flat.  I used a drinking glass to make round cuts in the dough but you could use anything round or simply cut small circles with a knife.

Take the dough and press it into a muffin tin.

Next put a couple spoonful’s of the cooked apple into the tin.

Finally top with the crumb topping.

Bake for 18 to 20 minutes at 350°F.

Once cool make the glaze and drizzle over the top.

These little treats are a cross between a cinnamon roll, a muffin, and a little pie.  Try the recipe and see what you think!

Here are the pics of the finished treats.  They were pretty delicious and would be great for a little dessert, or with your morning coffee.
